Job Summary

To oversee A.T & Piccolo's wine list by working closely with our patrons and advise them, according to their personal needs, i.e., their taste, food & wine pairing, the occasion or the budget; Managing wine lists, coordinating wine tastings with vendors, coordinating wine trainings with staff and ensuring quarterly and yearly financial goals are met.

Primary Responsibilities

  • Assist patrons in Piccolo & A.T. during dinner & lounge service to ensure guests satisfaction through consideration of clientele, food served, and occasion
  • Responsible for the creation of A.T. & Piccolo's wine list with guidance from Director of Food & Beverage and Managing Director
  • Create pairings for all seasonal menu rollouts
  • Maintain and rotate wine stock to ensure accurate inventories and par levels
  • Ensure wine sales meet budgeted cost of sales for wine
  • Hold bi-weekly wine training sessions focusing on growing the knowledge of all staff members in A.T., Piccolo & Bar
  • Hold daily training topics in line-ups to include knowledge of wine, but also proper steps of wine service at the table
  • Assist leadership in conducting beverage inventory, monthly
  • Update wine menus & POS system with updates
  • Create weekly wine specials using our Coravin Wine System to help move sitting inventory
  • Create par level and organizational system in the wine room

 

Knowledge

The wine steward should have knowledge of how wine is supposed to taste, using his or her expertise and education about grape varieties or regions along with harvest times, climates, soils and the overall winemaking processes. This in-depth understanding will help the wine steward to answer a vast number of questions from patrons as well as industry partners.

This job may also require some traveling that will broaden and deepen their understanding of winemaking processes. While discussing wine with clients, it is always nice to be able to tell a few anecdotes about the vineyard or the winemaker.

To keep up to date with the wine trends, he or she is also expected to regularly attend formal wine tastings, trade fairs and shows.

This person will also understand wine steps of services as outlined by The Court of Master Sommeliers.

Experience Required

  • Knowledgeable: As an educator and sales person, the wine steward must have an extensive knowledge of wine.
  • Communication: At the heart of the establishment's operation he or she needs to be able to communicate with the staff, management, suppliers and the clientele. The wine steward needs to be quick to react to customer's concerns and unusual service situations.
  • Approachable: He or she should be approachable and able to share his or her knowledge with the staff and guests in a confident and professional manner.
  • Sales oriented: He or she must be able to recommend wines to patrons and improve profits in order to meet financial targets.
  • Certifications. This person should hold certifications by The Court of Master Sommeliers and/or The Society of Wine Educators.
  • Responsibility. This person should be certified in responsible vendor through the State of Alabama.

Daily Operations:

This person's time will be shared between the actual work on the floor as a key member of the front of house team and the management of our wine list.

The afternoons will usually be dedicated to updating the wine list based on inventories, stock management and organization of our wine room, working with vendors, building training topics and plans and tastings.

The evenings will be dedicated to time in the restaurant and lounge assisting guests with their selections.

This position, while part-time, is dedicated to the peak nights of the restaurant and bar of Tuesday-Saturday. Weekends, Holidays and football season are all considered peak days for business in our restaurant and lounge.

GROOMING

All employees must maintain a neat, clean and well-groomed appearance (specific standards available). The wine steward will have a professional attire.
